SMELL AND TASTE OF SONORA


      The state of Sonora delights us in its taste and smell through their traditional drink, a hot water called Bacanora. The agave comes from angustofilia Bacanora haw, which is a kind of agave where its main characteristic is its high resistance to the desert climate, which makes it a little agave and compact compared to tequilana agave (Tequila) which is large and robust; these physical characteristics are reflected in the Bacanora since being compact concentrated sugars that give it its characteristic odor and flavor.
The Bacanora is part of the natural vegetation of the state of Sonora, but can be planted. 

       Bacanora agave harvest takes about eight years, so planting should be consecutively each year in order to have harvest every year. Bacanora Agave is a plant of great strength, so to protect wildlife and develop a long sheet of average thickness, which is full of hard and sharp spines difficult to chew for animals.

       The Bacanora harvested approximately eighth year of planting, when the maturation of the plant is the optimal in relation to the quantities of sugars containing the plant, which can be seen in their leaves, these in turn from green to a yellow color.
When the plant is mature begins to develop a "Jiote" this is a rod that goes from the center of the agave and which to develop one hundred percent plant will produce seeds and die, because all the nutrients from the agave concentrate on developing seeds. That's why it is extremely important to harvest the agave before this the "Jiote".


       The Bacanora is a fundamental part of the state of Sonora, as some regions of the state are found as a designation of origin areas, ensuring that only occurs on land Sonora Bacanora drink. Bacanora drinking is an experience; from its particular smell deep agave until smooth and warm taste in the mouth and around the body.

  2. That plant is huge! I tasted Bacanora once, but I don't really remember the taste, it was a long time ago. My father drinks Bacanora once in a while, when we go to Bacobampo, a small but beautiful town near Navojoa.
