The Taco Day




 "NEVER LOOK DOWN ON A GOOD TACO; THE APPETITE IS UNIQUE THAT NEED TO ENJOY THEM"




They say that a Mexican that not love tacos is because in their veins doesn´t run the blood of ancient Aztecs and that they not deserves be called descendant of the emperor Moctezuma. So important is this saucer in the gastronomy of this country, a fundamental recipe for all those who say that are proud of their nation.

Liking for taco is such that there are even those who have devoting their own day.

Apparently, this delicious food was born from the Mexican prehispanic age. The old Aztecs codes had documented the men of those times that they were devouring tacos with ferocity while they worked in the cornfields.

The colonist Spaniard Bernal Díaz Del Castillo, in his chronicle "The true story of the New Spain conquest", report the first big "taquiza" that organised the Spaniards expeditionaries and describes the spectacularity of the natives markets where it sold the ingredients to cooking them.

Half century after, tacos recipe continue present in the country kitchen and their flavour is widespread internationally, above all there where are communities of Mexican origin.

Some people assure that taco is the most democratic food of Mexico. Along and wide of country it expended in all kind of establishments, since the most luxurious restaurants as the most simple tacos store, a little trade in which it eats standing up, on the sidewalk, in the street; but the want of hygiene and the discomfort, isn´t enough barrier to get lost their attraction.

Their variety have not end. There are many types of tacos as ingredients that it can be coil up in a tortilla; coal, pastor, arab, arrachera, barbecue, birria, maw, shrimp, hamper, meat, bait, carnitas, mushrooms, chorizo, egg, beans, sausage, mole, nana, nenepil, potato, fish and suadero, amidst others.

It doesn´t matter if has meat or not, neither what type of this contain. There are of ostrich, chicken, pork and beef, snake and some ones that say, clandestinely, there are taco men who prepare your saucers with meat of donkey, horse, cat and even with dogs of the street, but this is share of the legend popular.

Depending of the hunger that it has, there is tacos of each of the parts of almost any animal anatomy: head, liver, lip. tongue, eye, paw, paunch, leg, kidney, testicle, gut and some others that remain shelters among the most dark secrets of who prepare them.

Now there are those who already gave them their own day to devote to this delicious dish. In Mexico for first time, a businessmen group have driven at March 31 as TACO DAY, although has not the official admission from the governorship.

Taco men and restaurant men announced many entertainments to celebrate this date with Honor.

But as usual in Mexico, nobody agrees and the new celebration it generated all kind of opinions among people, while there who already regulate their belts to celebrate out of control the new festivity, others question life together of the banquet.

  1. I love tacos!! My favorites are the "taquitos de frijol" and the "taquitos de carne asada" hahaha I think it's one of my favorite food, I knew that it was a "Taco day" but I didn't remember when was it, I'm going to break my diet today and eat a taco :P
